Something to share, just because.
Recently cooked two pieces of Cod on the BBQ.
Marinated a couple hours, then wrapped the fish in foil and tossed it on the grill.
Lesson One: Salt goes a long way; marinate called for a dash of salt; I used more like a half teaspoon. TOO MUCH.
Lesson Two: a little less time over the coals would have been better; called for twelve minutes over “medium high heat.”
I did more like 15 minutes over high heat (direct over coals). The fish was dried out. TOO MUCH.
Upside? I pushed back my barrier of cooking fish. Easy. And GOOD.
Salt, Heat, Fish: throttle back on the first two, and try again soon.
